Cottage Cheese Tutorial

Cottage Cheese is super yummy and really not as intimidating as it looks to make.  I'm probably the only one that gets intimidated about cheese - right?  Well I've been making cottage cheese over a year now and have tweaked my process enough that I declare it pretty much perfect and feel ready to share it with the world!

Quinoa Jambalaya

I usually make jambalaya with rice.  But I didn't have rice and I had some beautiful chicken broth simmering in my crockpot begging to be made into jambalaya.  So I decided to make jambalaya with quinoa.  Yum!

Philly Bake

So basically this is like eating the filling of a Philly Cheesesteak sandwich, in my opinion.  It's very yummy and easy to make.  I'm thinking it might freeze well, but I haven't tried it yet.  If I know I'm going to have a busy evening, I make this up when I have a free moment and keep the dish in the fridge until dinner time, then pop it in the oven and it's done in about 10 or 15 minutes.

Turnip Soup

This is a great basic soup recipe that can be easily adapted for a variety of vegetables.  It started out as my potato soup recipe and I've also used it for cream of asparagus soup, cream of broccoli, and most recently, turnip soup.

I usually triple this recipe and it will feed our clan of 9 plus some leftover so I'd say the original recipe would feed four?  I can't say for sure though as I haven't made just one batch in a loooong time.

Stuffed Pepper Recipe

This is a fantastic recipe for freezing and reheating when you don't have time to cook.

What I did is quadrupled the recipe and froze enough to last us all winter.  It took forever but I'm always thankful when I've had a rough day and don't feel like cooking, so easy to pop them outta the freezer and into the oven.  They do take quite a while to bake, though, when frozen.
